Sure, you could poke around and figure out how to edit the GNOME menu by hand, but there's a tiny little (133K) package that'll give you a GUI.

Code:
yum install alacarte

Now you can go to System -> Preferences -> Main Menu

I had a program I was running from command line, but it would be a lot simpler to have a menu item for it.  So in the menu editor, I click on the Application group I want to put it in, then click New Item.  I type in the name, browse for the command, and click OK.  Easy peasy!
