So I'm pretty good at getting connected to a jabber server, finally - and there are lots more of them showing up - great!

But how do I get off a jabber server altogether - I mean like other than inputting a typo in sugar-control-panel -s jabber jabberservername?

Could it be as simple as sugar-control-panel -s jabber disable  .....?

You're on the right track with the typo.  I haven't heard of any command to disable it all together.  Though for clarity, I'd:

sugar-control-panel -s jabber none

I did some looking and it appears that maybe a "command list" will include a command to turn off the server. I didn't find out how to get this list but did find the following which may be helpful, perhaps something over at "Loudmouth" will be helpful ?

The Presence Service is a D-Bus service on the XO that coordinates activity sharing. It uses Telepathy to access the network. It provides information about other people on the network and what activities they are participating in. It is responsible for initiating Telepathy connections when the XO is turned on, reconnecting Telepathy connections when they are disconnected, and registering the laptop with the Jabber server.
