Is there a GUI method to delete/remove Activities (I understand I can command line to do that)?  Is there an official "wishlist" area on the wiki for the development team for future builds?

I am at work and don't have my XO with me but with the latest version (8.20) on the home screen just hover your mouse over the activity you want to remove and wait till a little pop-up appears.  There should be a option to remove the activity.

If you register with http://dev.laptop.org/ you can open a ticket marked as "enhancement" and describe the feature that you see appropriate for next builds. Make sure that the issue  is not previously discussed by searching the ticket database. Also helps if you are pretty specific relating to specific systems and subsystems of the OS. "I do not like the journal" is not going to get you far
